Special Zucchini Bread
A moist, flavorful zucchini bread with hints of cinnamon and vanilla, perfect for breakfast or snack. Optional nuts and coconut add texture and richness.

Instructions
- Remove seeds from raw zucchini and grate.
- Mix eggs, oil, grated zucchini, sugar, flour, salt, cinnamon, baking soda, and baking powder together in a bowl.
- Stir well until all ingredients are combined.
- Fold in vanilla extract and the mixed nuts and coconut, if using.
- Pour the batter into two greased loaf pans.
- Bake at 350°F (175°C) until lightly browned, approximately 45 minutes to 1 hour.
- Cool the loaves in the pans tipped on their sides.
- After 15 to 20 minutes, remove from pans and continue cooling.
