Ingredients

  • 3 eggs
  • 1 cup oil
  • 3 cups grated zucchini
  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla
  • 1.5 cups nuts and coconut, mixed (optional)

Instructions

  1. Remove seeds from raw zucchini and grate.
  2. Mix eggs, oil, grated zucchini, sugar, flour, salt, cinnamon, baking soda, and baking powder together in a bowl.
  3. Stir well until all ingredients are combined.
  4. Fold in vanilla extract and the mixed nuts and coconut, if using.
  5. Pour the batter into two greased loaf pans.
  6. Bake at 350°F (175°C) until lightly browned, approximately 45 minutes to 1 hour.
  7. Cool the loaves in the pans tipped on their sides.
  8. After 15 to 20 minutes, remove from pans and continue cooling.
