Ingredients

  • 1/4 c. milk
  • 1 pkg. (1 Tbsp.) active dry yeast
  • pinch of sugar
  • 2 eggs, at room temperature and well beaten
  • 8 Tbsp. (1 stick) unsalted butter, melted and cooked
  • 1/4 c. sugar
  • generous 1/2 tsp. salt
  • 2 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1 tsp. ground coriander seed
  • 1 tsp. vanilla extract
  • 2 1/2 c. unbleached white flour

Instructions

  1. Heat milk to lukewarm (105°F).
  2. Stir in yeast and a pinch of sugar.
  3. Allow to proof for 10 minutes or until foamy. Stir in eggs, melted butter, sugar, salt, spices and vanilla extract.
  4. Add enough flour to form a soft dough.
  5. Turn dough onto a floured board and knead until smooth and elastic, about 10 minutes.
  6. Place dough in a greased bowl, turning to coat the top. Cover and let rise until doubled, 1½ to 2 hours. Divide into 4 pieces.
  7. Roll each piece into a 6‑inch oval, about ½‑inch thick.
  8. Place loaves on a greased baking sheet and let rise, covered, for ½ hour.
  9. Preheat oven to 375°F.
  10. Make decorative indentations with a thumb and brush loaves with beaten egg yolk.
  11. Bake for 15 to 20 minutes until golden.
