Indonesian Spice Layer Cake features rich layers infused with warm spices like cinnamon, cloves, nutmeg, and cardamom, creating a visually striking and flavorful dessert suitable for festive occasions.

Ingredients

  • 4 cubes butter, softened
  • 1 cube margarine, softened
  • 10 eggs, separated
  • 4 c. powdered sugar
  • 2 c. flour
  • 8 tsp. cinnamon
  • 4 tsp. cloves
  • 4 tsp. nutmeg
  • 3 tsp. cardamom

Instructions

  1. Whip butter and margarine until smooth.
  2. Add egg yolks and whip. Add powdered sugar and whip.
  3. Whip egg whites until stiff in another bowl.
  4. Add flour to the mixture and fold in whipped whites just until combined.
  5. Divide the batter, placing more than half in another bowl to remain white.
  6. Add spices to the smaller half of the batter.
  7. Grease and flour 2 round pans.
  8. Spread 2 tablespoons of brown spiced batter in a pan and bake at 250°F (120°C) for 5 to 10 minutes.
  9. Immediately spread 1 to 2 tablespoons of white batter and broil with door open until light brown.
  10. Continue alternating layers of colored batter, broiling and spreading immediately each time.
  11. If unable to alternate between pans, do one pan at a time.
  12. Cool the cakes on a rack.
  13. Slice off the edges of the cake.
  14. Wrap in foil and store.
  15. Cut into wedges to serve.
