Spice Raisin Crisps
Ingredients
- 3/4 c. vegetable shortening ⓘ
- 1/2 c. packed brown sugar ⓘ
- 1/2 c. granulated sugar ⓘ
- 1 large egg ⓘ
- 1 Tbsp. milk ⓘ
- 1 tsp. vanilla ⓘ
- 1 c. all-purpose flour ⓘ
- 1/2 tsp. ground cinnamon ⓘ
- 1/4 tsp. baking soda ⓘ
- 1/8 tsp. ground cloves ⓘ
- 1 1/2 c. Raisin Bran cereal ⓘ
- 1/2 lb. (2 sticks) butter (unsalted) ⓘ
- 1 1/2 c. golden brown sugar, firmly packed ⓘ
- 2 tsp. vanilla extract ⓘ
- 2 large eggs, well beaten ⓘ
- 2 c. quick oat cereal ⓘ
- 1 1/2 c. all-purpose flour ⓘ
- 1 tsp. baking powder ⓘ
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg ⓘ
Instructions
- Place racks in upper third of the oven and preheat to 350°. In a large mixing bowl with an electric mixer, beat butter, brown sugar and vanilla until light and fluffy, about 1 minute. Add eggs and mix until thoroughly incorporated. Add oats, flour, baking powder, cinnamon, nutmeg and salt. Mix on low speed until blended. Add nuts and raisins; mix on medium speed. Drop batter by heaping tablespoon 1 1/2-inches apart onto a greased baking sheet. Bake for 10 to 13 minutes or until golden brown. Cookies will feel soft, but will firm up as they cool. Let stand on baking sheet 2 minutes before transferring to racks to cool. Makes about 4 dozen.
