Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 cups sugar
  • 4 eggs
  • 2 cups chopped pecans, divided
  • 1 package cream cheese, softened
  • 1 1/2 teaspoons pure vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup salad oil
  • 2 cups finely shredded raw carrots
  • 1 package confectioners sugar

Instructions

  1. Sift together flour, cinnamon, baking powder, and salt.
  2. In a large bowl of an electric mixer, beat sugar and salad oil for 2 minutes.
  3. Beat in one egg at a time, beating thoroughly after each addition.
  4. Add flour mixture, beating just until blended.
  5. Mix in carrots and 1 cup of the pecans.
  6. Pour into two greased, waxed paper-lined 9-inch cake pans.
  7. Bake in preheated oven at 350°F (175°C) for 35 to 40 minutes.
