Ingredients

  • 2 lb. carrots, peeled and boiled
  • 1 bell pepper, sliced
  • 1 can tomato soup (10 oz.)
  • 1/2 c. salad oil
  • 3/4 c. sugar
  • 1 Tbsp. yellow mustard
  • 1 medium onion, sliced
  • 1/2 c. vinegar

Instructions

  1. Boil carrots until crisp-tender, then drain.
  2. Mix all ingredients in a large container.
  3. Cover and refrigerate overnight before serving.
