Spiced Grapefruit Upside-Down Cake

Ingredients

  • 1 grapefruit
  • 1/3 cup butter or margarine
  • 1/2 cup brown sugar, packed
  • 18 walnut halves
  • 1 (16 oz.) package pound cake mix
  • 2 eggs
  • milk (as needed for mix)
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ground cloves
  • 1 cup whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 grapefruit peel, grated

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Finely grate about 1/2 of the grapefruit peel and set aside.
  3. Peel and cut the grapefruit into 6 cartwheel slices and drain well.
  4. In a saucepan, melt butter and stir in brown sugar over low heat until smooth.
  5. Pour the sugar mixture into a greased 9-inch round cake pan, spreading evenly.
  6. Arrange the grapefruit slices over the sugar mixture in the pan.
  7. Sprinkle the grated grapefruit peel over the slices.
  8. Prepare the cake batter by mixing the pound cake mix, eggs, milk as needed, cinnamon, and ground cloves until smooth.
  9. Pour the batter over the grapefruit slices in the pan.
  10. Bake for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool for 10 minutes, then invert onto a serving plate.
  12. Whip the heavy cream with powdered sugar until soft peaks form.
  13. Serve the warm or cooled cake topped with whipped cream and walnut halves.
