  • 1 head garlic, separated and peeled
  • 1 c. red wine
  • 2 1/2 c. chicken stock
  • 1/3 c. orange juice
  • 1 Tbsp. tomato paste
  • 1 Tbsp. chopped or dried mint

Instructions

  1. Sprinkle eggplant with salt; let stand for 30 minutes.
  2. Rinse and pat dry.
  3. Preheat oven to 325°F (163°C).
  4. In a shallow dish, combine ground coriander, cumin, herbes de Provence, black pepper, ground ginger, turmeric, and salt.
  5. Roll lamb cubes in spice mixture, pressing spices evenly into the meat.
  6. Heat 2 teaspoons of vegetable oil in a skillet.
  7. Brown lamb in batches for 5 to 10 minutes until browned on all sides.
  8. Transfer browned lamb to a roasting pan.

  11. Add cooked vegetables to the roasting pan with lamb.
  12. In the same skillet, bring red wine, chicken stock, orange juice, and tomato paste to a boil, stirring to combine.
  13. Pour the liquid mixture over lamb and vegetables in the roasting pan.
  14. Cover the pan and bake for 2 hours.
  15. Remove from oven and boil the sauce for 3 minutes to thicken.
  16. Serve the lamb and vegetables topped with chopped or dried mint.
  17. Garnish with fresh mint and serve, preferably with rice pilaf.
