Ingredients

  • 1 pkg. boneless chicken breasts
  • 2 medium onions
  • 1 large can black olives
  • 2 medium green peppers
  • 2 large jars Cara-Mia artichoke hearts
  • 1 large can Progresso tomato puree
  • 1 large can Progresso crushed tomatoes
  • 5 large cloves garlic
  • oregano
  • salt

Instructions

  1. Drain oil off artichoke hearts; save.
  2. Add artichoke hearts to olive oil and heat in a large frypan.
  3. Skin chicken breasts and cut into large pieces; cook in the olive oil mixture.
  4. Remove chicken when done and set aside.
  5. Quarter the onions and chop the green peppers into medium pieces.
  6. Add onions and peppers to the frypan and sauté.
  7. Add sliced mushrooms and sauté until just tender.
  8. Add crushed garlic cloves and stir.
  9. Add tomato puree, crushed tomatoes, olives, and cooked chicken to the pan.
  10. Add remaining ingredients; cook for about 10 to 15 minutes.
  11. Serve over rice.
