Ingredients

  • 1/2 cup margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1 cup raisins
  • 1 cup applesauce

Instructions

  1. Mix together margarine, eggs, and vanilla.
  2. Beat with a spoon for 25 strokes.
  3. Mix together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Add dry mixture to egg mixture and stir well.
  5. Add raisins and applesauce and mix until combined.
  6. Pour batter into a greased loaf pan.
  7. Bake in a preheated oven at 350°F for 1 hour.
  8. Check for doneness by pressing the top; it should bounce back.
