A spicy, tangy Caesar salad with jalapeno, garlic, and Parmesan, perfect for those who enjoy bold flavors and a kick of heat in their greens.

Ingredients

  • 3-4 garlic cloves
  • 1 large jalapeno pepper
  • 12 drops Tabasco
  • 2 Tbsp. dry mustard
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 c. Parmesan cheese
  • 1 c. vegetable oil
  • 2 eggs
  • 3/4 c. wine vinegar
  • 2 Tbsp. Worcestershire sauce
  • Juice of three lemons
  • Anchovies
  • Romaine lettuce

Instructions

  1. In a food processor, chop garlic and jalapeno to the finest consistency possible.
  2. Add the remaining ingredients (except lettuce and croutons) and blend until of a pureed consistency.
  3. Chill the dressing for 30 minutes.
  4. Tear the Romaine lettuce into bite-sized pieces and pour the dressing over.
  5. Toss well to coat the lettuce evenly and top with croutons before serving.
