Ingredients

  • 1 1/2 cups cornmeal
  • 1 teaspoon baking soda
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 egg whites
  • 1/4 cup picante sauce
  • 1/4 cup vegetable oil
  • 8 ounces plain yogurt

Instructions

  1. Combine cornmeal, baking soda, sugar, and salt in a bowl.
  2. Make a well in the center of the dry ingredients.
  3. In a separate bowl, beat egg whites and mix with picante sauce, vegetable oil, and yogurt.
  4. Add the wet ingredients to the dry ingredients and stir until moistened.
  5. Spoon the batter into muffin pans coated with cooking spray, filling each about 2/3 full.
  6. Bake at 425°F (220°C) for 20 minutes.
