Ingredients

  • 1 lb. dried pinto beans
  • water
  • 1 lb. bacon, cut into 1/2-inch pieces
  • 1 lb. smoked sausage, cut into 1/2-inch slices
  • 2 medium onions, chopped
  • 1 small bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 cup Worcestershire sauce
  • 1/4 cup firmly packed brown sugar
  • 2 to 3 Tbsp. Cajun seasoning salt
  • 1 to 2 tsp. Tabasco
  • 1 bay leaf
  • 1 can stewed tomatoes

Instructions

  1. Sort and wash the dried pinto beans.
  2. Put the beans in a large Dutch oven and cover with water.
  3. Add 1/2 teaspoon baking soda to the beans.
  4. Bring to a boil and boil for 5 minutes.
  5. Drain the beans.
  6. Return the beans to the Dutch oven and add about 6 cups of water.
  7. Add the bacon, smoked sausage, chopped onions, chopped bell pepper, and minced garlic.
  8. Stir in Worcestershire sauce, brown sugar, Cajun seasoning salt, Tabasco, and the bay leaf.
  9. Add the can of stewed tomatoes.
  10. Bring to a boil, then reduce heat and simmer until beans are tender, about 1 hour.
  11. Remove the bay leaf before serving.
