Ingredients
- 1 lb. dried pinto beans
- water ⓘ
- 1 lb. bacon, cut into 1/2-inch pieces ⓘ
- 1 lb. smoked sausage, cut into 1/2-inch slices ⓘ
- 2 medium onions, chopped ⓘ
- 1 small bell pepper, chopped ⓘ
- 2 cloves garlic, minced ⓘ
- 1/4 cup Worcestershire sauce ⓘ
- 1/4 cup firmly packed brown sugar ⓘ
- 2 to 3 Tbsp. Cajun seasoning salt ⓘ
- 1 to 2 tsp. Tabasco ⓘ
- 1 bay leaf ⓘ
- 1 can stewed tomatoes ⓘ
Instructions
- Sort and wash the dried pinto beans.
- Put the beans in a large Dutch oven and cover with water.
- Add 1/2 teaspoon baking soda to the beans.
- Bring to a boil and boil for 5 minutes.
- Drain the beans.
- Return the beans to the Dutch oven and add about 6 cups of water.
- Add the bacon, smoked sausage, chopped onions, chopped bell pepper, and minced garlic.
- Stir in Worcestershire sauce, brown sugar, Cajun seasoning salt, Tabasco, and the bay leaf.
- Add the can of stewed tomatoes.
- Bring to a boil, then reduce heat and simmer until beans are tender, about 1 hour.
- Remove the bay leaf before serving.
