Spicy Monterey Rice

Ingredients

  • 2 cups water
  • 1 cup uncooked long grain rice
  • 1 tablespoon chicken flavor bouillon or 3 chicken bouillon cubes
  • 16 oz. sour cream
  • 1 1/2 cups shredded Colby cheese
  • 4 oz. can chopped green chilies
  • 1/2 cup chopped red pepper
  • 1/8 teaspoon pepper

Instructions

  1. In a medium saucepan, combine water, rice, and bouillon; bring to a boil.
  2. Reduce heat, cover, and simmer for 15 minutes or until rice is tender.
  3. In a large bowl, combine sour cream, 1 1/2 cups shredded Colby cheese, chopped green chilies, chopped red pepper, and pepper; mix well.
  4. Turn the mixture into a buttered 1 1/2-quart baking dish.
  5. Bake at 350°F for 20 to 25 minutes.
  6. Top with remaining cheese and bake for an additional 3 to 5 minutes.
