Ingredients

  • 1 1/2 cups cottage cheese
  • 1/2 cup wheat germ
  • 2 tablespoons chopped chilies
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 4 to 6 whole wheat English muffins
  • tomato slices
  • Cheddar cheese slices
  • minced parsley

Instructions

  1. Combine cottage cheese, wheat germ, chopped chilies, dried basil, oregano, and salt in a bowl.
  2. Spread the mixture onto toasted English muffin halves.
  3. Top each muffin with a slice of tomato and crisscross with two slices of Cheddar cheese.
  4. Broil for 5 minutes or until the cheese melts and is bubbly.
