Spicy Pepparkakor are traditional Swedish ginger cookies with warm spices, perfect for holiday gatherings or as a spicy treat with tea or coffee.

Ingredients

  • 3 cups plain flour
  • 2 teaspoons soda
  • 3 teaspoons cinnamon
  • 2 teaspoons ginger
  • 1 teaspoon cloves
  • 1 cup butter
  • 1 1/2 cups sugar
  • 1 tablespoon molasses
  • 1 unbeaten egg

Instructions

  1. Cream the butter until smooth and fluffy.
  2. Gradually add sugar and mix well.
  3. Add molasses and the unbeaten egg, blending thoroughly.
  4. In a separate bowl, combine the dry ingredients: flour, soda, cinnamon, ginger, and cloves.
  5. Gradually add the dry mixture to the wet ingredients, mixing thoroughly.
  6. Divide the dough into portions and roll out on a floured surface to 1/8-inch thickness, 1/4 at a time.
  7. Chill the dough if necessary for easier handling.
  8. Cut into shapes with cookie cutters and place on lightly greased cookie sheets.
  9. Bake at 400°F (200°C) for 8 minutes until golden.
