Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 cup chopped pecans or walnuts
  • ¾ cup vegetable oil
  • 3 eggs
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 teaspoons vanilla
  • 3 cups peeled, grated, drained zucchini

Instructions

  1. Combine the all-purpose flour, baking powder, ground cinnamon, baking soda, and chopped pecans or walnuts in a mixing bowl; make a well in the center.
  2. In a separate bowl, mix together vegetable oil, eggs, sugar, brown sugar, and vanilla until well combined.
  3. Stir in the peeled, grated, drained zucchini into the wet mixture.
  4. Pour the wet ingredients into the dry ingredients and stir until just moistened.
  5. Spoon the batter into two well-greased and floured 8½ x 4½ x 3-inch loaf pans.
  6. Bake at 350°F (175°C) for 1 hour.
  7. Allow the bread to cool for 10 minutes, then remove from pans to wire racks and cool completely before slicing.
