Ingredients

  • 2 cups shredded zucchini (drained)
  • 3 eggs
  • 1 cup vegetable oil
  • 1 cup sugar
  • 1/3 cup molasses
  • 2 tsp vanilla
  • 2 cups flour (unsifted)
  • 1/2 cup whole wheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1 cup raisins
  • 1 cup chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 5 x 9 inch loaf pans.
  3. In a large bowl, beat the eggs. Mix in the vegetable oil, sugar, molasses, and vanilla until well combined.
  4. Stir in the shredded zucchini.
  5. In a separate bowl, whisk together the flour, whole wheat flour, salt, baking soda, baking powder, and cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Fold in the raisins and chopped nuts.
  8. Divide the batter evenly between the prepared loaf pans.
  9. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in pans for 10 minutes, then remove and cool completely on a wire rack.
