- Preheat oven to 350°F (175°C).
- Grease and flour two 5 x 9 inch loaf pans.
- In a large bowl, beat the eggs. Mix in the vegetable oil, sugar, molasses, and vanilla until well combined.
- Stir in the shredded zucchini.
- In a separate bowl, whisk together the flour, whole wheat flour, salt, baking soda, baking powder, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the raisins and chopped nuts.
- Divide the batter evenly between the prepared loaf pans.
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in pans for 10 minutes, then remove and cool completely on a wire rack.
