Ingredients

  • 9-inch unbaked pie crust
  • 1 cup shredded Swiss cheese
  • 1/3 cup sliced scallions
  • 4 eggs
  • 4 teaspoons Worcestershire sauce
  • 1 package (10 oz.) frozen chopped spinach, thawed and drained
  • 1/4 cup grated Parmesan cheese
  • 1 1/4 cups light cream or milk

Instructions

  1. Hollow out the centers of the unbaked pie crust.
  2. Sauté the hollowed-out center with chopped celery, bell pepper, and onion in margarine until tender.
  3. In a mixing bowl, combine the thawed and drained chopped spinach, shredded Swiss cheese, sliced scallions, beaten eggs, Worcestershire sauce, grated Parmesan cheese, and light cream or milk.
  4. Pour the mixture into the prepared pie crust.
  5. Bake in a preheated oven at 375°F (190°C) for about 40 minutes or until the filling is set and golden brown.
