Ingredients

  • 2 (10 oz.) packages frozen chopped spinach
  • 2 cups herb stuffing mix
  • 1 onion, chopped fine
  • 1/2 teaspoon thyme
  • 1/2 cup chopped water chestnuts
  • 6 eggs, beaten
  • 1 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 3/4 cup melted margarine
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the spinach until tender, then drain thoroughly to remove all water.
  2. In a large mixing bowl, combine the herb stuffing mix, chopped onion, thyme, chopped water chestnuts, beaten eggs, garlic salt, pepper, melted margarine, and grated Parmesan cheese.
  3. Add the cooked and drained spinach to the mixture and stir until well combined.
  4. Shape the mixture into balls or transfer to a casserole dish.
  5. Bake in a preheated oven at 350°F (175°C) for about 30 minutes or until heated through and golden on top.
