Ingredients

  • 10 oz. frozen chopped spinach
  • 1/2 stick butter
  • 1/2 cup milk
  • 1 large egg
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Drain spinach in a colander and squeeze in a towel or with hands to remove all moisture.
  2. In a small pan, melt butter, stir in spinach, and cook over low heat for 5 minutes.
  3. Remove from heat and stir in milk and egg.
  4. Combine the mixture with the dry ingredients and mix until just blended.
  5. Pour the batter into a greased baking dish or skillet.
  6. Bake at 375°F (190°C) for about 15 minutes or until golden around the edges.
