Ingredients

  • 1 1/2 lb. spinach, drained or 1 package frozen spinach
  • 2 eggs
  • 2 cups milk
  • 4 tablespoons butter
  • 2 tablespoons flour
  • dash of salt and pepper
  • 1 teaspoon grated onion

Instructions

  1. Mix all ingredients and pour into a greased casserole dish.
  2. Bake at 350°F (175°C) for 30 minutes.
  3. Top with buttered cracker crumbs and Parmesan cheese.
  4. Bake for at least an additional 20 minutes until golden and set.
