Ingredients

  • 14 1/2 oz. chicken broth
  • 6 oz. tomato paste
  • 3 to 4 tsp. chili powder
  • 10 oz. frozen chopped spinach, thawed and well drained
  • 3 green onions, chopped
  • 1/3 cup sour cream
  • 1/4 cup small curd cottage cheese, drained
  • 1 1/2 cups shredded Colby cheese, divided

Instructions

  1. Preheat oven to 350°F.
  2. In a saucepan, whisk together chicken broth, tomato paste, and chili powder.
  3. Simmer, uncovered, for 5 minutes.
  4. In a bowl, combine spinach, chopped green onions, sour cream, and drained cottage cheese; stir in 1 cup shredded cheese.
  5. Spoon 1/2 cup sauce into a greased 11 x 7 x 2-inch baking dish.
  6. Dip tortillas into the remaining sauce.
  7. Spoon 1/4 cup spinach mixture down the center of each tortilla.
  8. Roll up tortillas and place, seam side down, in the baking dish.
  9. Top with remaining sauce and shredded cheese.
  10. Bake, uncovered, at 350°F for 20 minutes or until bubbly.
