Ingredients

  • 1 1/2 lb ground turkey
  • 1/2 c chopped onion
  • 1 c spaghetti sauce
  • 2 slices bread, crumbled
  • 2 eggs, slightly beaten
  • 9 oz chopped spinach, thawed and drained
  • 1/2 c shredded Mozzarella cheese

Instructions

  1. Combine ground turkey, chopped onion, and 1/4 cup spaghetti sauce in a bowl.
  2. On wax paper, pat out the turkey mixture into a 12 x 8-inch rectangle.
  3. Spread drained, thawed chopped spinach over the meat rectangle.
  4. Sprinkle shredded mozzarella cheese over the spinach.
  5. Starting with the short end, roll up the meat rectangle to form a log, sealing the seam.
  6. Place the rolled turkey in a 10 x 6-inch microwave dish, seam side down.
  7. Microwave on High for 12 minutes or until thoroughly cooked.
  8. Let stand for 10 minutes before serving.
  9. Heat the remaining spaghetti sauce and pour over the turkey roll before serving.
