Ingredients

  • 32 oz low-fat ricotta or nonfat cottage cheese
  • 1 (10 oz) package chopped spinach
  • 2 Tbsp sweet basil
  • 6 cups spaghetti sauce
  • 8 to 10 lasagna noodles
  • 16 oz low-fat mozzarella cheese shredded
  • 2 large garlic cloves crushed
  • 3 egg whites beaten

Instructions

  1. Heat the spaghetti sauce and add the crushed garlic cloves.
  2. In a large bowl, mix the ricotta or cottage cheese with the chopped spinach, beaten egg whites, 1/2 cup shredded mozzarella, and basil.
  3. In a 15 x 9 x 3-inch pan, spread a layer of sauce on the bottom.
  4. Place 4 to 5 uncooked lasagna noodles on top of the sauce.
  5. Spread a layer of the cheese and spinach mixture over the noodles.
  6. Repeat with another layer of sauce, noodles, and the mixture.
  7. Top with the remaining sauce generously and sprinkle with the remaining mozzarella cheese.
  8. Bake in the oven at 375°F for 15 minutes.
  9. Then reduce the temperature to 350°F and bake for an additional 30 minutes.
