Spinach Patties

Ingredients

  • 1 can chopped spinach
  • 2 eggs
  • 4 Tbsp. flour
  • spaghetti sauce
  • 1 1/2 c. Mozzarella cheese

Instructions

  1. Combine spinach, eggs, and flour; mix well until you have a batter.
  2. Pour pancake-like patties in a hot skillet with 2 tablespoons of oil.
  3. Fry until golden brown, approximately 4 to 5 minutes on each side.
  4. Take fried patties and place them in a baking dish.
  5. Cover with desired amount of spaghetti sauce and cheese.
  6. Bake at 425° for 10 to 15 minutes, or until cheese is brown.
