Zucchini Pie

Ingredients

  • 4 large zucchini
  • 2 Tbsp. flour
  • 1 c. olive oil
  • 3 Tbsp. grated Parmesan
  • 1 c. tomato sauce
  • 1/2 lb. Mozzarella, sliced thin

Instructions

  1. Cut zucchini into inch slices; sprinkle with flour and fry in olive oil until light brown.
  2. In a greased casserole, place one layer of fried zucchini; sprinkle with Parmesan cheese and add a little of the sauce.
  3. Cover with thin layers of Mozzarella and repeat the procedure until zucchini and other ingredients are all used, ending with Mozzarella.
  4. Bake in a moderate oven at 375° for 30 minutes.
