Ingredients

  • 9 or 10 oz. package frozen onions in cream sauce
  • 10 oz. package frozen chopped spinach
  • 2 eggs
  • 1 cup sour cream
  • 1/2 cup melted butter or margarine
  • 1/4 teaspoon salt
  • 8.5 oz. package corn muffin mix
  • 1/2 cup shredded Swiss cheese

Instructions

  1. Prepare onions in cream sauce according to package directions. Set aside.
  2. Cook spinach according to package directions and drain well.
  3. In a large mixing bowl, combine onions, spinach, eggs, sour cream, melted butter or margarine, and salt.
  4. Stir in corn muffin mix until well blended.
  5. Pour the mixture into a large greased casserole dish.
  6. Bake in a 350°F oven for 30 to 35 minutes or until a wooden pick inserted in the center comes out clean.
  7. Sprinkle shredded Swiss cheese on top of the casserole and bake for an additional 2 minutes or until the cheese is melted.
  8. Serve warm.
