Ingredients

  • 1 (No. 2) can spinach or 2 1/2 cups cooked spinach
  • 1/4 cup melted butter or salad oil
  • 1/2 teaspoon salt
  • few grains pepper
  • few grains nutmeg
  • 1 tablespoon horseradish
  • 2 eggs
  • 1 cup milk

Instructions

  1. Drain the spinach and chop it finely.
  2. Add melted butter, salt, pepper, nutmeg, and horseradish to the chopped spinach and mix well.
  3. Beat the eggs in a separate bowl and then stir in the milk.
  4. Combine the egg mixture with the spinach mixture.
  5. Pack the mixture into greased timbale molds, custard cups, or muffin tins.
  6. Place the molds in a pan of hot water to create a water bath.
  7. Bake at 350°F (175°C) for approximately 45 minutes until set and slightly browned on top.
