Ingredients

  • 2 c. All-Bran
  • 2 c. Shredded Wheat
  • 1/2 c. boiling water
  • 1 c. shortening
  • 3 c. sugar
  • 4 eggs
  • 1/2 c. raisins
  • 1 c. dates
  • 5 c. flour
  • 4 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2 tsp. salt
  • 1 qt. buttermilk

Instructions

  1. Mix boiling water with All-Bran and Shredded Wheat cereals and let cool.
  2. Cream together shortening, sugar, and beaten eggs.
  3. Sift all dry ingredients (flour, baking soda, baking powder, salt) together.
  4. Alternately add the dry ingredients and buttermilk to the creamed mixture, starting and ending with dry ingredients.
  5. Add the soaked cereals to the batter and mix well.
  6. Fold in raisins and small-cut dates.
  7. Pour the batter into greased muffin tins.
  8. Bake at 400°F (200°C) for 15 to 20 minutes until golden brown.
