Ingredients

  • 1 lb. split peas
  • 2 1/2 to 3 qt. water
  • 1/2 cup diced carrots
  • 1/2 cup chopped onions
  • 1/8 teaspoon thyme
  • bay leaf
  • 2 teaspoons salt
  • ham bone with meat
  • 1 1/2 teaspoons sugar
  • 1 tablespoon butter

Instructions

  1. Place the split peas in water and soak overnight.
  2. Cook the diced carrots and chopped onions for 10 minutes or until soft.
  3. Add the cooked vegetables to the soaked peas.
  4. Add thyme, bay leaf, salt, and the ham bone with meat to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer for about 2 hours.
  6. Remove the ham bone from the soup.
  7. Optionally, put the soup in a blender to puree.
  8. Add sugar and butter to the blended soup, then stir to combine.
