Ingredients

  • 10 oz. trimmed fresh spinach leaves or 3/4 c. frozen chopped spinach
  • 2 Tbsp. unsalted butter
  • 3/4 c. chopped shallots
  • 3 plum tomatoes
  • 1 c. milk
  • 2 eggs
  • 3/4 c. shredded Monterey Jack cheese
  • 1/4 c. chopped fresh dill
  • 2 tsp. grated lemon zest
  • 1/2 tsp. salt
  • 1 Tbsp. dried bread crumbs
  • 1 Tbsp. fresh grated Parmesan cheese
  • black pepper

Instructions

  1. Day before serving, rinse spinach well.
  2. Cover with water and cook over low heat for 3 to 4 minutes, stirring periodically.
  3. Drain well, squeezing out excess moisture, then chop coarsely and set aside.
  4. Melt butter in a small skillet over medium-low heat.
  5. Add shallots and cook until translucent, about 5 minutes.
  6. Set aside.
  7. In a medium bowl, whisk together milk, eggs, Monterey Jack cheese, dill, lemon zest, salt, and black pepper.
  8. Stir in the cooked spinach, seeded and chopped tomatoes, and shallots until well combined.
  9. Pour into a buttered 8-inch square baking dish.
  10. Cover with plastic wrap and refrigerate overnight, or until ready to bake.
  11. Preheat oven to 350°F (175°C).
  12. Bake the quiche uncovered for 40 minutes, or until set and browned.
  13. Remove from oven and let stand before serving.
