Ingredients

  • 2 cubes chicken bouillon
  • 2 cups water
  • 3 medium potatoes, chopped
  • 1/2 cup onions, chopped
  • 1 large can asparagus
  • 1 cup light cream
  • 1/2 cup whipping cream
  • 1 small jar cheese whip
  • 1 teaspoon salt
  • 1/8 teaspoon nutmeg

Instructions

  1. Combine chicken bouillon cubes, water, potatoes, onions, and simmer for 10 minutes until potatoes are barely soft.
  2. Add the entire can of asparagus to the soup.
  3. Slice the asparagus as it slides out of the can.
  4. Simmer the mixture for about 5 minutes.
  5. Blend the cheese whip and light cream together.
  6. Stir the blended cheese and cream into the soup until the cheese is melted.
  7. Do not bring the soup to a boil.

Tips & Substitutions

For a creamier texture, consider using half-and-half instead of light cream and whipping cream. You can replace the chicken bouillon with vegetable bouillon for a vegetarian version. If fresh asparagus is available, use about 1 pound, trimmed and chopped, for an even fresher flavor. Adjust the nutmeg to taste, as it can enhance the soup's warmth but should not overpower it.

Serving Suggestions

Serve the Spud 'N 'Sparagus Soup with crusty bread or a fresh garden salad for a complete meal. It pairs beautifully with 8 Can Chicken Casserole (Great For Potlucks) for a hearty dinner. Garnish with fresh herbs or a sprinkle of cheese for added flavor and presentation.

Storage & Reheating

Store any leftover Spud 'N 'Sparagus Soup in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stove over low heat, stirring frequently to prevent the cream from separating. You can also add a splash of water or broth if the soup thickens during storage.
