Ingredients

  • 6 to 7 medium potatoes
  • 16 oz. sour cream
  • 1/4 cup butter
  • 1 1/2 cups shredded Cheddar cheese
  • 1 can cream of chicken soup
  • 1/2 cup chopped onion
  • 2 cups cornflakes

Instructions

  1. Crumble the cornflakes and sauté in melted butter until lightly browned.
  2. Boil the potatoes in their skins until tender.
  3. Cool the potatoes, then peel and slice them thinly into small pieces.
  4. Heat the cream of chicken soup with 1/4 cup butter until warmed.
  5. Blend in sour cream, shredded Cheddar cheese, and chopped onion.
  6. Spread the potato slices in a 9 x 12-inch baking pan and pour the sauce mixture over them.
  7. Cover the dish and bake at 350°F for 30 minutes.
  8. Remove from oven, sprinkle the toasted cornflakes on top, and bake uncovered for an additional 15 minutes.
