Ingredients

  • 4 small squash
  • 4 eggs
  • 1/2 cup Bisquick
  • 1/2 cup oil
  • 1 tablespoon parsley
  • 1/4 teaspoon oregano
  • dash of pepper
  • dash of salt
  • 1/2 cup Parmesan cheese
  • 1/2 cup chopped onion

Instructions

  1. Beat the eggs in a large bowl.
  2. Cut the squash into small pieces and grate the onion.
  3. Add the grated squash, chopped onion, parsley, oregano, pepper, salt, Parmesan cheese, Bisquick, and oil to the beaten eggs.
  4. Mix everything thoroughly until well combined.
  5. Grease a 13 x 9-inch baking pan.
  6. Pour the squash mixture into the prepared pan and spread evenly.
  7. Bake in a preheated oven at 350°F for about 45 minutes, or until golden brown and cooked through.
