Ingredients

  • 1 Tbsp. cooking oil
  • 4 to 6 medium yellow squash
  • 1 small onion, chopped
  • 1 green chili pepper
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper

Instructions

  1. Saute onion and chopped chili pepper in oil until tender.
  2. Add squash, milk, salt, and black pepper.
  3. Cover and simmer for 15 minutes.
  4. Remove from burner; top with grated cheese and cover until cheese melts.
  5. Serve hot.
