Ingredients

  • 2 Tbsp. margarine
  • 2 c. yellow squash
  • 2 c. zucchini
  • 1 c. onion, chopped
  • 1/2 tsp. salt
  • 2 c. fresh tomatoes, chopped
  • 1 can green chilies
  • 2 c. rice, cooked
  • 1/2 c. grated Parmesan cheese

Instructions

  1. In a large skillet, melt the margarine.
  2. Add the yellow squash, zucchini, chopped onion, salt, and chopped fresh tomatoes.
  3. Cook for about 15 minutes, stirring occasionally.
  4. Add the green chilies and cook for 5 minutes more.
  5. Spoon the vegetable mixture over cooked rice and sprinkle with grated Parmesan cheese.
