Ingredients

  • 2 cups squash, cooked
  • 1 cup bread crumbs
  • 2 eggs
  • 1 tablespoon minced onion
  • 1/2 cup milk
  • 3 tablespoons melted butter
  • 1 cup grated cheese
  • 3 slices fried bacon

Instructions

  1. Slice the summer squash and cook in a small amount of water.
  2. Add 3 tablespoons of melted butter and 3/4 to 1 cup of bread crumbs or crackers.
  3. Add salt, pepper, beaten eggs, minced onion, and milk to the cooked squash mixture.
  4. Mix some grated cheese into the mixture.
  5. Pour the mixture into a baking dish.
  6. Top with the remaining cheese and fried bacon slices.
  7. Bake at 350°F (175°C) for 1 1/2 hours until bubbly and golden.
