- Place yellow squash in a shallow microwave-safe round glass baking dish.
- Top with chopped onion and sliced zucchini.
- Sprinkle with grated Parmesan cheese.
- Combine melted margarine, beaten eggs, milk, and pepper.
- Pour the mixture over the squash and vegetables.
- Do not stir.
- Cover with plastic wrap and microwave on High for 5 minutes.
- Turn the dish a half turn and cook on 50% power for 12 to 14 minutes or until almost set.
- Let stand for 5 minutes before serving.
