Ingredients

  • 2 to 2 1/4 cups thinly sliced yellow squash
  • 1 small zucchini, thinly sliced
  • 1/2 cup chopped onion
  • 1 cup grated Parmesan cheese
  • 1/4 cup margarine, melted
  • 3 eggs, beaten
  • 1 cup milk

Instructions

  1. Place yellow squash in a shallow microwave-safe round glass baking dish.
  2. Top with chopped onion and sliced zucchini.
  3. Sprinkle with grated Parmesan cheese.
  4. Combine melted margarine, beaten eggs, milk, and pepper.
  5. Pour the mixture over the squash and vegetables.
  6. Do not stir.
  7. Cover with plastic wrap and microwave on High for 5 minutes.
  8. Turn the dish a half turn and cook on 50% power for 12 to 14 minutes or until almost set.
  9. Let stand for 5 minutes before serving.
