Ingredients

  • 2 lb. yellow squash, cleaned and sliced
  • 2 Tbsp. margarine or butter
  • 1/2 c. chopped onion
  • 1/2 c. chopped bell pepper
  • 1/2 c. water chestnuts
  • 1/2 c. grated Cheddar cheese
  • 1/2 c. mayonnaise
  • 1 tsp. sugar
  • 1 egg, well beaten
  • buttered bread crumbs
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Cook squash in boiling water until tender, about 5 minutes.
  3. Drain well and mash.
  4. Saute chopped onion, chopped bell pepper, and water chestnuts in butter until tender.
  5. Combine sautéed vegetables with mashed squash.
  6. Fold in grated cheddar cheese, mayonnaise, sugar, beaten egg, salt, and pepper.
  7. Pour the mixture into a buttered 1 1/2-quart casserole dish.
  8. Top with buttered bread crumbs.
  9. Bake for 30 minutes until golden and bubbly.
