Stacked Tomato Salad

Ingredients

  • 13 c. extra-virgin olive oil
  • 3 tbsp. chopped fresh parsley
  • 2 tbsp. fresh lemon juice
  • 1/2 tsp. salt
  • .13 tsp. Freshly ground black pepper
  • 2 bunch arugula (stems removed)
  • 3 small red tomatoes
  • 3 small yellow tomatoes
  • 1 small red onion
  • 3 oz. 3 ounces Maytag blue cheese

Instructions

  1. Whisk together olive oil, parsley, lemon juice, salt, and pepper in a small bowl.
  2. Toss arugula with 3 tablespoons olive oil mixture.
  3. Divide arugula evenly among 6 plates.
  4. Top with stack of several red and yellow tomato slices and garnish with red onion.
  5. Sprinkle with blue cheese.
