Ingredients

  • 2 c. bran cereal
  • 2 c. boiling water
  • 2 1/2 c. sugar
  • 1 c. shortening
  • 5 c. flour
  • 4 tsp. baking soda
  • 1 1/2 tsp. salt
  • 4 eggs
  • 1 qt. buttermilk

Instructions

  1. Mix the 2 cups bran cereal and boiling water. Let stand.
  2. Cream the sugar and shortening until well combined.
  3. Sift together the flour, baking soda, and salt.
  4. Add eggs one at a time to the creamed mixture, beating well after each addition.
  5. Stir in the buttermilk and remaining 4 cups of bran cereal.
  6. Fold in the bran-water mixture and dry ingredients until just moistened.
  7. Spoon the batter into greased muffin tins.
  8. Bake at 375°F (190°C) for 20 minutes.
