Ingredients

  • 2 lb. small catfish fillets
  • 2 eggs
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup margarine or butter
  • 1 Tbsp. milk
  • about 1/2 cup flour
  • about 1 cup Parmesan cheese

Instructions

  1. Preheat oven to 400°F.
  2. Combine Parmesan cheese, flour, salt, and pepper in a bowl.
  3. Dip each catfish fillet in the beaten eggs mixed with milk.
  4. Coat the egg-dipped fish with the cheese-flour mixture.
  5. Place the coated fish in a baking dish and pour melted margarine or butter over the top.
  6. Bake for about 45 minutes. May need to broil the last 5 minutes to brown.
