Shrimp Cornbread Dressing

Ingredients
- 8 oz. can cream of mushroom soup (optional) ⓘ
- 2 lb. cleaned shrimp ⓘ
- 1 cup chopped onions ⓘ
- 1 cup chopped celery ⓘ
- parsley ⓘ
- 1/2 cup chopped bell pepper ⓘ
- 1 1/2 sticks margarine ⓘ
- 1/2 cup chopped green onions ⓘ
- 2 eggs ⓘ
- 1 package Pepperidge Farm herb seasoning cornbread stuffing ⓘ
- 1 small prepared cornbread
Instructions
- Saute onions, celery, and bell pepper in margarine until tender.
- Add chopped shrimp and cook until shrimp is pink.
- Season with salt, pepper, parsley, and garlic, if desired.
- Mix in cornbread stuffing and prepared cornbread.
- Add well-beaten eggs mixed with 1 cup water to the mixture.
- Add additional water as needed until the mixture is soft.
- Transfer to a baking dish and bake at 350°F until browned, about 45 minutes.
