Ingredients

  • 3 Tbsp. chopped onion
  • 2 Tbsp. butter
  • 1 Tbsp. flour
  • 1/2 cup milk
  • 2 eggs
  • 1 can corn
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 tomatoes

Instructions

  1. Saute chopped onion in butter until limp.
  2. Blend in flour.
  3. Gradually add milk, stirring constantly, until smooth and thick.
  4. Stir slowly into slightly beaten eggs.
  5. Add canned corn, salt, and pepper.
  6. Wash and core tomatoes.
  7. Cut 3 times across the blossom end of each tomato, within 3/4 inch of the stem end.
  8. Place tomatoes in a shallow 1 1/2-quart baking dish and open the segments.
  9. Pour the corn mixture around the tomatoes.
  10. Place the dish in a pan of hot water and bake at 350°F for about 40 minutes.
  11. Garnish with parsley, if desired.
