Steeplechase Brunch
Ingredients
- 8 slices white bread, crust removed (I use Pepperidge Farm) ⓘ
- 2 to 3 Tbsp. butter, softened ⓘ
- 1/3 c. butter or margarine ⓘ
- 1/3 lb. fresh mushrooms, sliced ⓘ
- 1 1/3 c. thinly sliced yellow onions ⓘ
- salt and pepper to taste ⓘ
- 1 lb. mild bulk sausage ⓘ
- 1/2 lb. Cheddar cheese, grated ⓘ
- 4 eggs
- 1 3/4 tsp. dry mustard ⓘ
- 3/4 tsp. ground nutmeg ⓘ
- 2 Tbsp. finely chopped fresh parsley ⓘ
Instructions
- Butter 1 side of the bread with softened butter and set aside. Melt 1/3 cup butter and brown mushrooms and onions over medium heat for 5 to 8 minutes or until tender.
- Season to taste with salt and pepper; drain and set aside.
