Ingredients

  • 10 oz. frozen spinach
  • 8 oz. jumbo stuffing shells
  • 2 c. low-fat cottage cheese, drained
  • 2 egg whites
  • 4 oz. shredded Mozzarella cheese
  • 2 Tbsp. grated Parmesan cheese
  • 1/4 tsp. garlic powder
  • pepper to taste
  • 1 pt. tomato sauce

Instructions

  1. Cook spinach according to package directions; drain thoroughly.
  2. Cook jumbo shells according to package directions; drain and cover with cold water.
  3. Combine cooked spinach, drained cottage cheese, egg whites, shredded Mozzarella, Parmesan cheese, garlic powder, and pepper in a bowl.
  4. Stuff the spinach and cheese mixture into each cooked shell.
  5. Place the stuffed shells in a greased 9 x 13-inch baking dish.
  6. Cover the shells with tomato sauce.
  7. Bake uncovered at 350°F for 45 minutes or until bubbling and heated through.
