Ingredients

  • 2 lb. cubed lean beef
  • 2 Tbsp. shortening
  • 3 1/2 c. water
  • 1 medium onion, sliced
  • 1 Tbsp. salt
  • 1 Tbsp. Worcestershire sauce
  • 6 medium potatoes, cubed
  • 4 medium carrots, sliced 1/4-inch thick
  • 2 medium onions, cut into eighths
  • 1 c. ketchup
  • 1/2 c. dry red wine
  • 1 pkg. frozen peas

Instructions

  1. In a large pot, melt the shortening over medium heat.
  2. Add the cubed beef and brown on all sides.
  3. Add sliced onions and cook until softened.
  4. Pour in 3 1/2 cups water (or 4 cups if omitting red wine) and bring to a boil.
  5. Stir in salt and Worcestershire sauce.
  6. Add cubed potatoes and sliced carrots.
  7. Reduce heat, cover, and simmer for about 1 hour or until the beef and vegetables are tender.
  8. Add the eighths-cut onions, ketchup, and red wine (if using), stirring well.
  9. Simmer uncovered for an additional 15-20 minutes to blend flavors.
  10. Add frozen peas and cook for another 5 minutes until heated through.
  11. Adjust seasoning if needed and serve hot.
