- In a large pot, melt the shortening over medium heat.
- Add the cubed beef and brown on all sides.
- Add sliced onions and cook until softened.
- Pour in 3 1/2 cups water (or 4 cups if omitting red wine) and bring to a boil.
- Stir in salt and Worcestershire sauce.
- Add cubed potatoes and sliced carrots.
- Reduce heat, cover, and simmer for about 1 hour or until the beef and vegetables are tender.
- Add the eighths-cut onions, ketchup, and red wine (if using), stirring well.
- Simmer uncovered for an additional 15-20 minutes to blend flavors.
- Add frozen peas and cook for another 5 minutes until heated through.
- Adjust seasoning if needed and serve hot.
