Ingredients

  • 11 oz. can mandarins, drained
  • 1 tsp. salt
  • 1/2 c. sugar
  • 2 eggs
  • 2/3 c. milk
  • 1 Tbsp. baking powder
  • 4 Tbsp. mandarin peel in syrup
  • 1/4 c. honey
  • 2 c. flour
  • 1/2 c. uncooked oat bran
  • 5 Tbsp. butter

Instructions

  1. Preheat oven to 400°F and line muffin tins with papers.
  2. Put 1 teaspoon honey in the bottom of each muffin cup, then top with a mandarin section.
  3. Combine flour, oat bran, baking powder, salt, and sugar in a bowl and stir to mix.
  4. Add mandarin peel, eggs, milk, and melted butter to the dry ingredients and stir just until combined.
  5. Spoon batter over the mandarin slices in each muffin cup, filling about 2/3 full.
  6. Bake for 15 to 20 minutes or until a straw inserted in the center comes out clean.
  7. Serve warm.
