Ingredients

  • 2 lb beef
  • 1/2 cup oil
  • 1 medium dry onion
  • 2 cups fresh tomatoes
  • 3 teaspoons vinegar
  • 1 cup dry red wine
  • 6 bay leaves
  • Salt
  • Pepper
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon paprika
  • 2 lb small dry onions
  • 2 cloves garlic

Instructions

  1. Cut the beef into small pieces.
  2. Dice the onion.
  3. Sauté the beef in oil until browned.
  4. Add the diced onion and sauté together for three minutes.
  5. Add chopped tomatoes, vinegar, red wine, bay leaves, salt, pepper, nutmeg, cinnamon, paprika, parsley, and 2 cups of warm water.
  6. Cook on low heat for 2 1/2 hours.
  7. Peel the small dry onions and carve them crosswise.
  8. In a pan, melt the butter and add 1 cup of water.
  9. Add the onions, garlic, and salt.
  10. Cook on low heat until the water evaporates.
  11. Add the cooked onions to the beef and cook for the last 30 minutes.
